It goes well with dishes with strong flavors such as vegetable tempura, fried chicken, and pickles. It can be enjoyed on the rocks, with hot water, with water, straight, or as an after-meal drink. It is also recommended for premium Wagyu beef ribs.
The raw material is "Beni Haruka" from Yumigahama Peninsula, Tottori Prefecture. By using sake yellow koji and yeast, the flavor of the sweet potato is maximized. From 2021, we started making Beni Haruka in our own field (1.5 tan).

The Chiyomusubi Brewery [translates to “Eternal Ties with People”] has been producing sake and now, shochu as well] since 1865. The brewery puts special emphasis on using the locally sourced Goriki rice, an ancient varietal that was all but extinct until a revitalization effort in the 1980s brought it back to life.
