Poli uses copper pot stills for distillation, which is carried out at the time of grape harvest. The final distillate, at 75% abv, is lowered to 40% by the addition of distilled water. It is then chilled to 40?F, filtered and bottled. Aged for at least 6 months in stainless steel vessels.
Jacopo Poli Vespaiolo is a single-vintage grappa made from the pomace of the aromatic Vespaiolo variety, grown in the Breganze hills of the Veneto region, where the soil is volcanic and the temperature is cool.
