In true Carnivor style, our Zinfandel delivers fully punctuated notes of dark fruit with spicy aromas, like opening a tin of black tea and dried cherry. The mouthfeel is rich with luscious notes of blackberry compote and black plum and a touch of cherry. Undercurrents of toasted oak and rich chocolate give the wine decadent complexity.

Following a brief cold soak to encourage extraction of color and tannin from the fruit, the must was fermented between temperatures of 86°-90°F. A portion of the blend was aged on French and American oak for four to six months to balance the wines and soften the tannins. We blended a small amount of Cabernet Sauvignon grapes to enhance the wine’s color and structure. 

Opulent, concentrated blackberry jam, black currant, cardamom, dried florals on the nose. The massive blueberry, boysenberry compote, baked peaches, cinnamon, coats the palate falling into layers of dark chocolate, coffee, vanilla cream with silky tannins and a dry finish.
