The process for this red is the same as that for the Valpolicella. The additions of Cabernet Franc, Cabernet Sauvignon, Nebbiolo, Sangiovese, and Croatina in this bottling make it a more fruit-driven counterpart to the earthy, spicy Valpolicella.
55% Corvina and Corvinone, 15% Rondinella, 10% Cabernet, 15% Merlot, 5% Nebbiolo, Croatina, Sangiovese sourced from a single vineyard.
After 3-4 days of maceration, primary fermentation starts with indigenous yeasts. The wine is racked and then sits until February, when it is racked onto the lees of the Amarone which starts a second alcoholic fermentation (this process is called ripasso). After this fermentation, the wine is racked into large Slavonian oak barrels for seven years.
